In this work an innovative method for the determination of condensed tannins in red wines is presented. The method exploits the selective reactivity of tannins towards proteins and takes advantage of a simple and rapid preparation, combined with the use of an optical photometer available as a laboratory prototype. The rapid optical method for tannins estimation in red wines has been proposed in the context of a national (102019000002585) and European (application PCT / IB2020 / 051304) patent; it has been developed as a prospective tool to support the work of oenologists and wineries and to boost the production of quality wines.
