THIS ARTICLE INVESTIGATED THE RELATIONSHIP BETWEEN THE PHENOL CONTENTS, THE ANTIOXIDANT ACTIVITY AND THE ORGANOLEPTIC CHARACTERISTICS OF THE TWO MAIN TUNISIAN VIRGIN OLIVE OILS ( CVV. CHÉTOUI AND CHEMLALI). THE CHÉTOUI OILS PRESENTED THE HIGHEST VALUES OF TOTAL PHENOLS, RADICAL SCAVENGING ACTIVITY AND BITTER INDEX.
