Summary: Electrolyzed oxidizing water (EOW) has potential application as a residue free sanitizing agents for surfaces in contact with food. This study is aiming at evaluating its effectiveness in reducing microbial counts, including total bacterial count, Salmonella Typhimurium, Staphylococcus aureus, Listeria monocytogenes and Escherichia coli, on stainless steel, Teflon and ceramic. Data show a 8 Log10/ml reduction of all bacterial species inoculated in EO water and a significant reduction of total bacterial count, Salmonella Typhimurium, Staphylococcus aureus, Listeria monocytogenes and Escherichia coli after contact for 5 seconds on artificially contaminated surfaces. The authors discuss advantages of electrolyzed oxidizing water in order to use it as a valid alternative disinfectant.
