The sorrentina peninsula is a region which has got an elevated attendance of national and international tourism. In this area there are 686 commercial business which produce between 30 and 1500 meals per day. The authors collected data of 180 inspections carried out in one year in restaurants, bars, hotels, camps and farms holidays. They checked facilities, food preservation technical and law knowledge of restaurateurs and records to verify the correct application of HACCP system. The administrative anch criminal distresses were 28 and 17 respectively. The authors underline hygienic and sanitary problems for 25% and transgressions of the low for 9% of commercial business.
