Verotoxigenic Escherichia coli are recognized as important human pathogens. Foods of animal origin are a major mode of transmission of these micro-organisms. However, studies conducted in Italy to determine the presence of VTEC in foodstuffs have found 0.8% of positive samples among diary products and 0.43% among minced beef. In the present study the determination of presumptive E. coli from samples collected for the purpose of the HACCP system in the Veneto region food industries has revealed a high proportion of positive food samples (44.2%-47.4%). 233 out of 331 isolated strains (70.4%) have been analysed by Polymerase Chain Reaction (PCR) for the presence of vt1, vt2, eae, and antigens O157 and H7 encoding genes. Only four strains have shown presence of the VT2 toxin encoding gene. These VTEC strains were isolated from a sample of swine raw meat and a sample of fresh sausage. The prevalence of VTEC in the examined foodstuffs has been 2.6%.
