The authors analyse the regulations of the organisations that operate in the agro-industrial sector and of the health workers authorized to the food inspection. Now, these institutions are: Hygiene of Foodstuff and Nutrition Department, Food Adulteration Department, National Forest Police, Regional Departments of the Police Corps "Carabinieri" and Veterinary Services Local Health Units. The number of Departments is too high and it gives rise to misunderstandings among workers of the food-processing industry in the esamination of the same problems.
