The purpose of the work was to characterize the pigment profile (chlorophylls and carotenoids) of monovarietal virgin olive oils from six Italian olive cultivars from three Italian growing regions (Emilia-Romagna, Sicilia and Molise). Quantitative and qualitative differences in pigment compounds were also studied to determine whether this fraction could be used as a varietal or geographical marker.

Abstract
The purpose of the work was to characterize the pigment profile (chlorophylls and carotenoids) of monovarietal virgin olive oils from six Italian olive cultivars from three Italian growing regions (Emilia-Romagna, Sicilia and Molise). Quantitative and qualitative differences in pigment compounds were also studied to determine whether this fraction could be used as a varietal or geographical marker.File in questo prodotto:
