A Fast GC/MS method for plant sterols (PS) analysis was developed, using a capillary GC column coated with 5% diphenyl-polysiloxane. The main PS (beta-sitosterol, campesterol, stigmasterol, D5-avenasterol, campestanol and sitostanol) were well separated in 1.5 min, with a good peak resolution (R>1.4). Good repeatability (intraday RSD<7.3%, interday RSD<8.8%) and sensitivity (0.006-0.026 ng) were also achieved. Finally, the Fast GC/MS method for the determination of PS was tested on a PS-enriched food (milk). The analytical performance and significant reduction of the analysis time and consumables, demonstrates that Fast GC/MS could be also employed for the PS analysis in functional foods.
