Integrated food safety assurance schemes require definition of hazards and effectiveness of control measures applied at subsequent step of production. Food chain information is not a mere compilation of records, but the basis for farm quality assurance and modulation of inspection at processing plants. However, condemnation cannot be the tools to solve the problems that need to be solved at farm level. In intensive farming system, spread of zoonotic enteric bacteria, mechanisms of antibiotic resistance transfer to human pathogens like enterococci, salmonellae and campylobacter, and other animal diseases can easily reduce the quality and usability of animal and eggs. In the aim of the new legislation restrictions to marketing will be imposed to products from infected groups. Cleaning status of poultry and eggs, standard of growth and integrity are essential for the hygiene of further processing, but are to be achieved with technologies aiming at maintaining higher level of animal welfare and lower level of antibiotics, which pose new challenge to industry. Feed chain production chain need also improvements in the control strategies for environmental and accidental contamination from biological and chemical contaminants that are released in the environment from humans’ activities. In order to improve the effectiveness of control measure at various levels, the joint efforts of producers and Control Authorities are obviously needed.
