In this paper the recipe Riso alla cacciatora by Pellegrino Artusi is analysed from a text-linguistic and text-typological perspective, to show that it has the common features of narrative style: it is told by a narrator, it has characters involved in ‘space-and-time’-dynamic states of affairs, and it shows not only diegesis but also mimesis. Nonetheless this text – obviously also thanks to its title and because of the book it belongs to – is naturally interpreted (i.e., endo-linguistically translated, in Jakobson’s terms) by its addressees exactly as a recipe, i.e. as an instance of a genre belonging to the text-subtype «INSTRUCTION […] WITH OPTION», aiming «at the formation of future behaviour» (Hatim 1984: 147). However, in the text-linguistic and text-typological literature it is a far well-known fact that there is no necessary one-to-one correspondence between the texture of a text – its ‘surface’ features – on the one hand, and its function – the communicative purpose of its sender – on the other. So from the genre perspective this text is to be considered a non-prototypical recipe at the interpersonal level (in Halliday’s functional terms), whereas from the (sub)type perspective it is to be considered an instance of narrative style at the ideational and textual levels.
