The aim of this article is to provide an overall view of lipids and fat-soluble compounds involved in human biology. A description of the chemical composition of major and minor lipid classes in fats and oils is provided, together with their metabolism and biological functions in the organism. A picture of main food sources and dietary recommendations of fats and oils is also given. Finally, current trends in fats consumption are also faced, where technological and biological aspects are depicted.
