Compositional data of commercial "cured" chestnuts (Castanea sativa Mill.) of three biotypes coming from different mountain areas of Emilia-Romagna were monitored during two years (1999-2000). The characteristics of the nuts of two biotypes particularly appreciated in local markets such as Marrone di Alfero and Marrone di Zocca, respectively from Alfero (FC) and Zocca (MO), were compared to those of fruits of Marrone di Castel del Rio harvested in the production area regulated by IGP. All the considered biotypes showed a large variation of each single constituent and the effect of the year of harvest resulted in some cases a source of variability far more important than the effect of the biotype. Principal components analysis (PCA) was used to describe the chemical composition of samples and the three biotypes resulted characterized by different values of sugars content over two years of analysis. The cluster analysis permitted to discriminate the three biotypes on the basis of their chemical composition independently from the year of harvest.
