The production of heavy pig has its principal aim the supply of thighs for DOP production. For this is very important the subcutaneous fatty acid composition, which depends largely upon pig feeding. Therefore is necessary to investigate the fat source which can be used in the feed. Muscular proteolityc enzymes (cathepsins) activity is of paramount importance for good raw ham repening. Knowledge and hypotheses about genetic and enviromental factor affecting cathepsins activity are reviewed. Pig welfare regulation are leading to reduce the resort to surgical castration of male pigs; this would lead to dramatic consequences on profitability and therefore survival of heavy pig production.
