Foodification e pratiche solidali nell'epoca della pandemia: il caso delle Cucine popolari di Bologna

The term ‘foodification’became recently the synthesis of some transformation processes already in place in contemporary cities. Those processes, which are related to the connection between food consumption and other causes, are, for example, touristification, urban renewal, gentrification, or more general effects of substitution and displacement within urban fabric. This paper focuses on the demand of food ‘from below’, starting from pandemic effects on “foodified” urban contexts. The research about the case of “Cucine popolari” in Bologna wishes to include some socially productive practices related to the need for food in the wider discussion about the relationship between food and urban transformations, and to integrate the meaning and scope of the term ‘foodification’.

Il termine foodification ha di recente sintetizzato una serie di processi di trasformazione delle città contemporanee legati al nesso fra consumo di cibo e altri fattori: touristification, rigenerazione urbana, gentrification commerciale, o più generali effetti di sostituzione e di-splacement all’interno del tessuto urbano. Il contributo si concentra sulla richiesta di cibo ‘dal basso’ a partire dagli effetti della pandemia sui contesti urbani ‘foodificati’. Il caso delle Cucine popolari di Bologna vuole includere nella più ampia discussione sul rapporto fra cibo e trasformazioni urbane, alcune pratiche socialmente produttive legate al bisogno di cibo, in modo da integrare il significato e la portata del termine foodification.
