It aims to promote sustainable seafood consumption by building on the Irish coastal cultural heritage while engaging with innovative chefs and educationalists. The project encourages human consumption towards more sustainable seafood from lower down the food chain by tapping into local marine resources and rediscovering forgotten Irish seafood recipes
