The topic “Multilevel rules of wine and new didactics” might have a vast survey field, since it assembles the regulatory norms of such product at all levels - international, communitarian and national - and the consequent necessities of a modern didactics. With specific reference to wine rules, the paper underlines that such discipline is paradigmatic of an evolution in more general terms of food law towards a multilevel system, within which communitarian rules appear of peculiar relevance. As a matter of fact, the wine legislation represents a complexity of rules, being the wine the most controlled agricultural and food product and the most affected by the globalization of the markets, even though still representing a product whose characteristics are tied to the territory of origin. The paper admits that it is now widely recognized that a system of food law has been developed, with own principles and rules, it is still under debate whether the subsystem of wine rules have its relative autonomy. As far as the didactics is concerned, it is to underline that in Italy many Faculties of Agriculture have instituted specific bachelor courses in viticulture and enology as a confirmation of the peculiarity and importance of the sector. In such courses instructions on viticulture legislation do not lack, even if - at least according to the experience of the author - it is very difficult to adequately give account of the complex normative system in this sector, both because it is generally the only law course for the students and because the credits are usually few. The author therefore suggests that it would be worth trying to give an adequate space to the system of the sources, as it is often opportune in the legal courses carried on in various faculties different from Law faculty. It should be mentioned that O.I.V. (International Organization of Vine and Wine) has adopted some resolutions in which it recommends to the Member States the insertion of Wine Legislation in the education of professionals of the field.
