This chapter aims to provide a general picture on conventional and innovative extraction and processing technologies at industrial level, to produce edible vegetable oils from fruits, oilseeds and beans. The most common extraction and refining technologies are discussed, with particular attention for novel and environmental-friendly technologies; specific examples are provided for some edible vegetable oils, including olive oil.
