Food Micro 2006, the 20th International ICFMH Symposium on Food Microbiology, was held at Alma Mater Studiorum, Università degli Studi di Bologna, from August 29th to September 2nd, 2006. “Food safety and food biotechnology: diversity and global impact” was chosen as the pacemaker title of the symposium. The meeting was focused on 4 macrotopics: 1. Food microbes “omics”: form genes to traits: 2. Food microbiology and safety 3. Food biotechnology 4. Counting the uncountable: predictive and descriptive methods in food microbiology Each of the macrotopics was divided in a number of subtopics, covering all the main issues in contemporary food microbiology.
