This initial part is a summery of the main topics of the module giving a general overview on prebiotic structures, synthesis, metabolism in the host, modulation of the intestinal microbiota and also health effects. Topic II. “Chemical structure and production of prebiotics”: provides basic knowledge of the most important prebiotic compounds and of other compounds that are under investigation to assess their prebiotic potential. There are the chemical description of these compounds e also the industrial processing for their production.
