NIRs technique was used to define both the internal quality traits conventionally used (soluble solid and flesh firmness), as well other internal paremeters (sugars, organic acid, anthocyanins) normally determined in equipped laboratory by gaschromatographic and spectrophotometric techniques. NIRs was also used to determine the degradation of chlorophyll in the ground color of the fruits. Chlorophyll content was statistically related to the flesh firmness and the soluble solid of the fruits and the de-greening pattern is proposed as an harvesting index capable to indicate the appropriate time of harvesting
