This contribution analyzes the process of foodification in Bologna, examining its evolution, distribution, and impacts within the historical city center. Employing quantitative and qualitative methods, the research frames the urban transformations generated by foodification in relation to various urban processes, such as commercial gentrification and touristification. Three areas of the historical center – Pratello, Mascarella, and Piazza Maggiore – are examined, highlighting how foodification differentially affects the urban fabric, shaping micro-geographies of food with heterogeneous effects
