The research focuses on the inclusion of the Apulian territory of centuries-old olive groves in the UNESCO list, to ensure their environmental, social, cultural, and economic safeguard (for instance, through the preservation of Extra-Virgin-Olive Oil). As concerns tourism, we believe that directing Apulian tourism towards the areas identified as a UNESCO heritage site would lead to a paradigm shift which will be closer to what is proposed in Goal 4 of the United Nations’ Agenda 2030 based on the Global Citizenship Education. Furthermore, we deem necessary the involvement of local policy to ensure a high degree of preparation of the host communities for what concerns sustainable tourism practices, eventually producing significant results in the cooperative, relational and governance fields
