The great interest in minerals physico-chemical properties rises from their availability in nature and the variety in their structure and composition. Bulk properties are extensively studied, whereas the surface ones present a growing interest as regard characterization at the nano/sub-nano meter scale and mutual interaction with biomolecules and organic matter. These last topics are covered in the present work with original results in a framework of up-dated discussion and new horizons of research in the field of evolution theory of mineralogy and petrology.
