A method, based on sensitive and selective liquid chromatography/tandem mass spectrometry (HPLC/MS/MS), has been developed to check the presence of total Fumonisin B1 and B2 (FBs) in corn flour. Sample was extracted with acetonitrile/water/methanol, filtered and diluted with PBS; the sample extract was cleaned up on immunoaffinity columns Fumoniprep® .The eluate was analyzed by HPLC/MS/MS with electro spray ionization in positive ion mode. In order to determinate the level of FBs in corn flour (polenta) present at market in Emilia Romagna District, the Health Department sampled about 50 samples according to Reg.(CE) n. 401/2006. Only 5% of samples was rid of FBs, 63% of samples present a level of FBs < 1000 μg/kg, 16% between 1000 – 2000 μg/kg and 16% of analyzed samples presents a level of FBs > 2000 μg/kg, exceeding the limits fixed in UE Reg.(CE) n. 1126/2007. In these samples besides FBs, were also investigated the presence of Aflatoxin B1 and total, Ocratoxin A; these mycotoxins were not detected.
