This paper has the aim of supplying an exhaustive picture of a particular reality of the fishery industry. The increase of the fishery products demand has involved an uncontrolled exploitation of the marine reserves and the fishery has reached its biological sustainability threshold. For these reasons, in the recent past the aquaculture has grown in a relevant manner. The present survey starts from these considerations and has the aim to describe the general situation of the world-wide, European and Italian aquaculture and next to examine the farming and marketing trade of a particular kind of product, Penaeus spp., which affect significantly the global production in terms of value but not of quantity.
